Why Induction Cooking is Better?

By Naba Kumar

The modern induction cooktop is revolutionary. You can find the use of induction rapidly increasing across both household and professional kitchens.

However, the traditional flame cooking on the fire is still preferred by many. But as per expert suggestions, induction has many advantages to its account as compared to the traditional gas stove or electric heater cooking.

If you are in a dilemma as to which is better, then this article is for you. Here in this article, you will get to know why induction cookers can be chosen over a traditional gas stove.

1. Energy efficiency

energy efficency

Induction cooking is better than an electrical or gas stove because it is energy efficient.
With electromagnetic induction, the magnetic field of the cooktop induces a different magnetic field on the iron base of the induction stove.

Approximately 80-90 percent of the energy is used to induce the magnetic field on the pot. Very little energy is lost in the process. Also, in induction, the energy is focused directly on the cooking vessel, which is why food is cooked faster and you don’t sweat while cooking.

gas flame

On the other hand, the gas stove heats the cooking pot with a flame generated by the burning of the LPG gas. Approximately 40-50 percent of the energy generated is used to heat the pot for cooking. Approximately 50 percent of the energy is spent in the form of heat while cooking on gas.

Due to this extra heat loss, you sweat while cooking, and also the cooking time on the gas stove is extra as compared to the induction top.

2. Induction is safe to use

Undoubtedly, everyone will agree that induction is a lot safer than a gas stove as there is no flame involved during cooking.

While the chances of gas leakage, fire hazard, and in the extreme case, chances of explosion always remain. You have to be always vigilant if you are using a gas cylinder.

Especially, if small kids are around, you have to be extra careful that the regulator is switched off properly or the connection is removed altogether. That makes it a hassle that every time you have to remove and again reconnect the regulator valve.

If you are using a gas stove for commercial purposes, then you have to get so many safety certificates. Moreover, the use of gas or flame is prohibited in certain places like railway stations and airport premises.

However, there is no restriction on the use of an induction cooktop. You can use it anywhere with the relief that it is tested child safe. There is no hassle of switching off or reconnection in using induction. Since no flame is used, there is no chance of fire hazard involved.

Precaution

  • Never touch the ceramic surface of the induction cooktop just after cooking.
  • Those who use a pacemaker should stay away from an Induction.

3. Cooking time is less in Induction

As compared to the gas stove or electric heater, an induction cooktop takes less time for cooking.

Many people are under the impression that cooking on gas is faster as the flame heats the vessel at a much faster rate. While this fact is true, the heating up in the induction is uniform, and about 90% of the energy is used in cooking which makes the overall cooking faster.

4. Multi-mode cooking

multimode cooking

One thing that adds positive remarks for induction is the facility to use multi-mode cooking options. You get different cooking modes like boiling, pressure cook, deep fry, saute, boiling milk or keep warm. In the latest induction cooktops, you even get precision settings for cooking dishes such as Idli, Dosa, and many more.

Mind that these cooking modes can help you cook without worries about the right temperature and heat.

5. Induction is economical in the long run

On average, you have to bear a total cost of Rs. 10.80 for heating 10L of water, in case the gas is unsubsidized. For subsidized gas, the cost may go down to Rs. 6 – 6.50.

If you want to use an electric heater, then be prepared to bear the brunt as the heater will raise your electricity bill to that high.

On the other hand, the cost of heating 10L of water is just Rs. 5.21 in the induction. So, comparatively, the cost of cooking is lower in induction than the other two methods.

People may argue that you need to invest in special cooking vessels if you are buying an induction. Yes, that may incur an additional cost. However, you will not believe that at the price of a branded gas stove, you can get an induction as well as a complete cooking range.

You do not believe, right?

Then check out the price of the best induction cooktops. You will be surprised, we bet.

6. Induction consumes less space

The induction is undoubtedly a winner for this factor, and no one can deny that. You need a lot of dedicated space for the gas stove. Whereas, an induction cooktop occupies an area equivalent to a long notebook.

7. Induction is highly portable

In terms of portability, you know how much you have to sweat if you decide to clean the kitchen area by removing the gas cylinder and stove. But for an induction, just pick it up and keep it somewhere else.

You can even continue cooking on the induction cooktop while you clean the kitchen. Isn’t it great?

8. Hassle-free

Unlike the gas stove where you have to book and refill the cylinder every month, you do not have any such hassle of booking or refilling. Buying an induction is a one-time investment and you literally have no expense other than the electricity you consume while cooking.

9. Maintenance is less in Induction

In terms of maintenance, there is hardly any maintenance required for the induction cooktop. In the case of a gas cylinder, you have to keep the burners, pipes clean and well-maintained.

The flame intensity of gas burners gets affected with time, for which you may have to call a professional gas stove repair person. However, you do not have such liabilities for an induction.

10. No difference in food-taste

difference

There is hardly any difference in the taste of food cooked on an induction cooktop and a gas stove. In fact, you can relax while cooking as induction has auto cut-off and timer features.

The same is not at all available in gas or electric heaters. You have to guard the food to prevent it from overcooking or getting burnt.

Summing Up

Cooking in induction is better than a gas stove or an electric heater, and there is absolutely no doubt in that. It is true that the initial cost for induction may be a little higher than a gas stove or electric heater. However, induction is economical in the long run.

If you have an uninterrupted power supply in your area, then an induction can fulfill the entire cooking needs. If you face power outages, then keeping a gas connection as the backup will be a wise decision.
